Ingredients
· 3 Roma Tomatoes, diced
· 1 Small yellow onion, diced
· 2 Fresh jalapenos, diced
· ¼ cup of Cilantro, chopped
· Salt to taste
· 1 tbsp fresh lime juice
· Pinch of Sugar
· Four steaks (lean)
· 8 corn tortillas (or 16, if you want to double-up on the tortillas)
· Sour cream (optional)
· Cheese (optional)
Pico de Gallo:· 3 Roma Tomatoes diced
· 1 Small yellow onion diced
· 2 Fresh jalapenos diced
· Small amount of Cilantro chopped
· Salt to taste
· 1 tbsp fresh lime juice
· and a little secret is Sugar, just a bit
· Place in an air-tight container with lid, refrigerate until it’s time to go!
At the tailgate, fire up the grill and throw on the meat.
Season your steak with a seasoning salt
Cook to your likening (rare, medium rare, medium, medium well or well)
Dice the steak
Place corn tortillas on the grill, and lightly toast on each side
Fill corn tortillas with diced steak and Pico de Gallo and enjoy!
