Three Easy Walnut Recipes From Jasper
Walnut & Blue Cheese Tort
2 lbs Wisconsin Butternut Blue Cheese
1 lb Crave Brothers Mascarpone Cheese
3/4 cup Chopped Walnuts
1 Honey Crisp Apple
2 Tabl. Chopped Chives
Slice apples and drizzle with lemon juice.Place celophane in a 6 inch glass bowl. Dust bottom with chives. Add blue cheese and spread mascarpone. Add sliced apples and repeat entire process. Wrap and chill.
To serve: Unwrap, invert and place on cheese board. Serve with toasted baguette slices.
Creamy Walnut Salad Dressing
1/2 cup chopped Walnuts
1/4 cup Balsamic
1/2 cup Olive oil
Fresh taragon
Salt & pepper to taste
1/2 up Sour Cream
Mix all ingredients and chill. Serve with sliced pears, crispy prosciutto and wild field greens.
Spaghetti & Walnuts
1/2 lb cooked Spaghetti
1 cup Half & Half
1/2 cup Heavy Cream
Salt to taste
1/2 cup Pecorino Romano grated
1/2 up walnuts
1 teasp. Butter
In a saute pan on medium heat, add butter and saute walnuts for a few
minutes. Do not burn. Add cream, Half & Half and salt. Reduse sauce.
Add cheese and cook until creamy. Toss with cooked spaghetti. Add
cracked pepper to taste and serve.
Jasper's Notes: This is also great over ravioli. Add fresh herbs to
taste..your choice. I also like to reduce pan with a little white wine
for added flavor!
