Old School Italian Pasta

Legend has it that Spaghetti alla Carbonara was invented by the coal miners outside of Rome. The pasta is quick and easy to prepare, the crispy Italian bacon looks like burnt coal and mixed with eggs and cheese becomes a unique sauce.

Jasper's Spaghetti alla Carbonara
8 oz. Spaghetti
4 Egg Yolks
1/4 Cup Cream Sherry
Freshly Ground Pepper
4 Tabl. Butter
1/2 Cup Diced Onions
1 Cup Diced Pancetta
Salt to taste

Bring 4 qts of salted water to a boil. Coo pasta according to package directions. Do not rinse pasta. While the pasta is cooking, beat the egg yolks, sherry and cheese in a mixing bowl. Set aside. Melt butter in a large saute pan, add onions and pancetta and saute 4 minutes to render fat and crisp up pancetta.. Transfer pasta to saute pan with onions and pancetta, remove from heat. Add egg yolk mixture and toss to coat, add freshly ground pepper to taste. Serve immediately.
