Jasper Offers 4 Ways to Use Local Squash

Local Carnival Squash Bisque

1 Carnival Squash (2-3 lbs)
1 tabl. Olive oil
1/2 cup Minced carrots
1/2 cup Minced Onion
1 Tabl Butter
1/2 Cup Cream
Pinch Cinnamon
2 Cups Chicken Broth
Salt & pepper to taste

Preheat oven to 375. Peel Carnival Squash, cut in 1/2 and remove an seeds. Cube. Drizzle with olive oil. Roast on baking dish 45 minutes. Cool.
In a large pot, sauté the onions, carrots and celery in the butter until the onions are soft, about 5 minutes. Add broth and bring to a boil. Reduce heat and simmer 15 minutes. Stir in the squash and simmer.
Add heavy cream. . Place in blender and puree until smooth. Return to soup pot and warm until ready. Top with crispy bacon ang green onions for added flavor.


Grand Spaghetti Squash

1 Spaghetti Squash
1/4 cup Wisconsin Roth Case Gran Cru Gruyere
2 Tabl. Butter
1/2 cup Heavy Cream
Salt and pepper to taste

Preheat oven to 375. Wash squash; pierce squash several times with a large fork. Place squash on baking sheet.
Bake 1 hour. Allow squash to cool; cut squash in half, and remove 0Aseeds. Using a fork, remove spaghetti-like strands.
In a saute pan, melt butter and cream. Add cheese and mix. Add squash strands and toss. Season with salt and pepper. Serve as a side dish with your favorite roasted meat or chicken.


Roasted Local Acorn Squash

1 Acorn Squash
1 Tabl. Butter
1 Tabl. Brown Sugar
Cinnamon to taste
Nutmeg to taste

Preheat oven to 400 degrees. Cut Acorn squash in half, remove seeds, add butter, sugar, cinnamon and nutmeg. Place on baking dish and roast
1 hour. Serve warm or scoop out center and puree.


Stacked Local Delicata Squash

1 Delicata Squash
2 Tabl. Extra Virgin Olive Oil
Red pepper flakes
Sea Salt to taste

Preheat oven to 375. Cut the squash into 1/2-inch-thick rounds and then cut around the centers of the rounds to remove the seeds. Place the squash rounds on the baking sheets. Drizzle olive oil over the rings. Turn the rings so they're coated on both sides. Sprinkle with salt and red pepper. Roast in oven until tender, about 45 minutes.
Serve stacked.
