Jasper Gets Cheesy with Fresh Mozzarella

Jasper Mirabile's Fresh Mozzarella

2 Lbs Cheese Curds
2 Gallons Water
2 Cups Kosher Salt

Cut cheese curds into 1 inch cubes. Add water to a large pot and bring to a boil. Remove from heat and ladle over the curd, just enough to cover. Let sit until curd begins to soften and melt. Using a wooden spoon, stir the mixture until the curd begins to pull (you should have a string like effect. Mozzarella comes from the Italian word Mozare which means to stretch or pull so stretch the cheese in the bowl with wooden spoon and pour off excess water. Take the cheese in your hands and begin to fold under itself creating a round shape of desired size and place fresh mozzarella in a bowl of cool water, continue this process until all the fresh mozzarella is formed.

Serve with fresh tomatoes, basil and olive oil, use as a topping for your pizza or bake with your favorite pasta.
