INGREDIENTS2 Cups Lentils
8 Cups Water or chicken broth
1/2 Cup Carrots
1/2 Cup Onions
1/2 Cup Celery
Salt & Pepper to taste
Pinch Oregano
1 lb. Italian Sausage crumbledor
Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and carrots, and saute until tender and translucent. Stir in lentils, add water or broth and bring to a boil.
Season with salt and pepper, reduce heat to medium and continue to cook for 45 minutes. Add a pinch of oregano and give a final stir. Serve hot in bowls and drizzle with olive oil before serving.
