This all-purpose seasoning can be sprinkled over anything you want to slow-smoke; it adds color, flavor and a good crust, or bark, on meats. Makes about 2 cups.
1/2 cup freshly ground black pepper
1/2 cup smoked or sweet Hungarian paprika
1/4 cup granulated garlic or garlic powder
1/4 cup onion salt
1/4 cup packed brown sugar
3 tbsp dry mustard
3 tbsp celery seeds
3 tbsp chili powder
1. In a glass jar with a tight-fitting lid, combine pepper, paprika, garlic, onion salt, brown sugar, mustard, celery seeds and chili powder; cover
and shake to blend.
2. Store in a cool, dark place for up to 3 months.
