KANSAS CITY, Mo. – John and Michelle Grier always dreamed of opening their own restaurant. They just didn’t dream their first year would be in the midst of such an economic downturn. That’s why they are so pleased to have come full circle – marking one year in business.
The Griers fell in love with traditional Italian pizza while honeymooning in Italy. They wanted to bring the true flavor and taste of Italy to Kansas City. They opened Blue Grotto in Brookside last year.
Their chef and partner Chris Graham prepares the Italian style pizzas using imported ingredients from Italy. They are baked at 900 degrees in a wood-burning oven, just as they have been doing in Italy since the 1700’s.
With their first year under their belt, Blue Grotto recently expanded the restaurant with an outdoor patio, designed to enjoy the summer atmosphere. They also added a patio appetizer menu.
